Ingredients:
200 g Tirol grey cheese
50 g butter
1 small onion
1 litre beef or vegetable broth
125 ml whipping cream
2 potatoes
Salt, pepper, nutmeg, chives & bread cubes
Method:
Brown the finely chopped onions. Dice the uncooked potatoes and the grey cheese. Add these ingredients to the beef or the vegetable broth and the browned onions and simmer gently for around 20 minutes. Season to taste with salt, pepper and nutmeg. To finish, add the whipping cream and blend while still hot (hand blender). Scatter over the toasted bread cubes and chives, then serve!
