Dumpling festival in St.Johann in Tyrol - pressed dumplings

Tyrolean cheese dumplings are very popular in the alpine lodges and at the annual dumpling festival in St. Johann in Tyrol. It's so simple for you to have a go at cooking this delicious, flavoursome Tyrolean speciality dish yourself. But take note - after you've made your cheese dumplings, leave them to cool on a wire rack, so they don't stick together!

Ingredients for pressed dumplings from the Kitzbüheler Alpen

500g stale French bread, cut into 1 inch cubes
2 Onions
1 bunch Parsley
2-3 Eggs
2 Potatoes (boiled)
200 ml Milk
250 g Beer cheese or a semi-hard cheese

Method for making this Tyrolean speciality dish

Cut the boiled potatoes into small cubes and work into the dumpling dough mix with a full-flavoured, aromatic cheese. 'Press' the dumplings together and fry until golden in some clarified butter. To make the gravy, dilute the beef stock with water to the consistency you prefer. Add the dumplings, bay leaves and onion rings and simmer. TIP: Instead of serving the pressed dumplings in a broth, they can also be served in a salad with crispy bacon pieces.
